Australia Day Cocktail: Watermelon and Vodka Slushy

This refreshing and fruity cocktail recipe is perfect for those hot summer evenings.

Signature fruity cocktails are a fun way to add a personal spin to the wedding bar. However, if you don't already have a drink that symbolises your relationship, don't be pressured into creating one, just prepare something easy and delicious!

Australia Day is the perfect time to trial a new fruity cocktail recipe ahead of the big day. Invite over a bunch of friends to be your taste-testers and whip up this serious crowd-pleaser!

I N G R E D I E N T S

2 cups of diced watermelon

1 chopped peach, skin removed

60mls simple syrup*

1 tblspn lemon juice

60mls vodka

Soda water

M E T H O D

Place the watermelon, peach, simple syrup, lemon juice and vodka in a blender and blend until smooth.

Add the soda water and mix until combined. Serve with ice, peach and watermelon slices.

* S I M P L E   S Y R U P

This is simply equal parts of white sugar and water.

Bring the mixture to the boil and stir constantly until the sugar is dissolved. 

Remove from the heat, allow to cool completely then bottle. Keep refrigerated until ready to use.
