Bake deliciously decadent melt-in-your-mouth cookies for guests to enjoy with a cup of coffee at the end of the meal!
LEMON FILLED LAVENDER COOKIES
225 grams unsalted butter
130 grams caster sugar
300 grams plain flour
60 grams rice flour
3 teaspoons culinary lavender flowers
1.Preheat oven to 180º C.
2.Line baking trays with baking paper.
3.Cream together butter (at room temperature) and sugar until well combined.
4.Add the sifted flours and culinary lavender to the mixture.
5.Using floured hands, work the mixture together to form a smooth ball.
6.Wrap in plastic and place in the refrigerator for at least 20 minutes.
7.Roll out the dough onto a floured surface and cut out the biscuits with a cookie cutter.
8.Place cookies on the baking tray leaving enough room for them to spread.
9.Bake for approximately 15 minutes until golden.
10.Carefully place on a cooling rack and leave to cool completely.
LEMON CREAM CHEESE FILLING
60 grams unsalted butter at room temperature
125 grams cream cheese at room temperature
4 cups icing sugar mixture
Juice and zest of a large lemon
1.Combine all ingredients in the bowl of an electric mixer and beat on medium speed until well combined and fluffy.
2.Pipe or spread onto half of the cookies.
3.Top with the other half.
4.Store in an airtight container in the refrigerator until ready to be packaged.
Note: Biscuits can be made days in advance and kept in an airtight container. They are delicious on their own or filled with the lemon cream. If filling with cream, leave it until the day before the event. Culinary lavender is available from www.auslavender.com.au
