If you thought your wedding cake had to be fruitcake... think again! "¨Wedding cakes can come in almost any flavour you can think of. In the end it's a matter of personal taste but here are a few considerations.

Etiquette

Traditional wedding etiquette held that the top tier of the cake was to remain uncut and stored until the first anniversary. If you would like to honour this, then the top tier of your cake needs to be fruitcake. Store it well, wrap and freeze it in an airtight container. When your anniversary comes around have it re-iced and enjoy.

Serving your cake as dessert

If you're serving your cake as dessert, think about what comes before it. If you're having a very savoury main dish you might like something sweet and sticky, if you're meal is rich you might like something lighter."¨If you're planning on giving your guests your cake as dessert, opt for something a little more exotic. Ask your caterers to serve it with cream, ice cream or fresh fruit.

Which flavour?

Some of us think chocolate is great 24 hours a day while others prefer lighter desserts like carrot cake. What time of your day will your wedding be held? If you're having a wedding brunch, a banana cake might be just the ticket. What season will you be married in? Summer may require a lighter cake than winter when that white chocolate mud cake will come into it's own.

Special needs

If you, or any of your guests have dietary requirements such as lactose intolerance or gluten-free diets, most cake designers would be able to accommodate you. Alternatively your cake decorator will happily decorate a cake you supply them.

Flavour heaven

Despite all this talk - the best flavour cake is the one you and your honey will enjoy the most. Go to your chosen cake designer together and taste some of the options available. If you just can't agree on the best flavour why not have a different one for each tier?"¨Here are some ideas to whet your appetite:

  •          Traditional dark fruitcake
  •          Mud cakes in any flavour you can think of - try cherry, caramel, mango and of course white or dark chocolate.
  •          Carrot cake
  •          Flourlesss orange and almond
  •          Orange and poppyseed
  •          Red velvet
  •          Sticky Date
  •          Marble Cake
  •          Croqembouche
  •          Butterscotch
  •          Lemon
